Battery hens live a life that is completely unnatural for them. In small, cramped, metal pens they are crudely debeaked and kept in terrible conditions. Having rescued battery hens myself. I was amazed after their trauma of years living in darkness and intolerable conditions,  how quickly their natural instincts, or dirt baths and scratching for bugs came back. 

Be very mindful about the kind of eggs you choose. They should be free roaming, fed on vegetarian foods and not given antibiotics. 

Better still just choose the best ‘welfare’ eggs from egg producers or pet hen keepers that give hens plenty of clean pasture and water that and are free from pesticides, herbicides and fertilisers.

 This is a delicious combination, that will leave you feeling energised. I love a cooked breakfast (minus the bacon or sausages) which I will never eat again, for obvious welfare reasons. I have too much respect for highly intelligent pigs who have the same instinct as my dog! So I will not support the horrific pig meat industry. Plus bacon, which is processed with nitrate. Is not a healthy choice for us humans.  


Choose the best ‘welfare’ eggs. I’m a great believer of everything in moderation. So you will find eggs in some of my recipes and I always give you an egg free alternative.

veggie cooked breakfast

To save time the lentil burgers can be made ahead of time, chilled or frozen. They can be cooked in the oven or in the frying pan. 

Makes 4- 6 burgers

Lentil Pattie

1/2 cup brown lentils

500g sweet potato, halved

1/2 cup chick peas, drained and squashed with a fork

2 tablespoons olive oil, plus extra for frying

1 red onion, finely chopped

2 garlic cloves, crushed

1 tsp mixed herbs chopped, parsley or coriander

1tbsp sunflower kernels

1 tbsp pepitas

1/3 cup plain flour

salt and ground black pepper


Kale and Tomato Stir Fry; 

2 tbsp olive oil, plus extra if necessary

2 garlic cloves 

1 -  2 red onions, sliced into strips

handful of spinach or kale, finely chopped

Optional - 4 large flat mushrooms (optional) or 1 red pepper, cored and cut into strips or a bunch of broccolini, roundly chopped

1 punnet cherry tomatoes, washed

relish of your choice; houmous, tomato salsa,  beetroot salsa (favourite brand Yalla Foods

  1. Preheat oven to 220°C/200°C fan-forced. Line and oven tray with baking paper. Place sweet potato on tray and drizzle with half of the oil, season. Bake for 30 - 40 minutes until tender. Remove the flesh from the skin and mash in a bowl and set aside. 

  2. Meanwhile, rinse the brown lentils and cook in a pan of boiling water for 15-20 minutes until softened. Drain well. Transfer to a large bowl to cool. 

  3. Heat oil in a large frying pan on medium. Cook onion and garlic for 4-5 minutes until softened.

  4. Transfer to bowl with lentils and sweet potato, chick peas and herbs. Mix well and season to taste. Chill until cold.

  5. Form into patties and toss in the pepita's and sunflower seeds with a little flour  to coat. Place on a baking paper-lined tray. Chill again.

Putting it all together; 

  1. Heat oil in frying pan on medium-high. Add the Cook patties for 2-3 minutes each side until golden. Drain on paper towel and keep warm in the oven. 

  2. Add a little more oil and add the onions, garlic  and cook until golden brown. 

  3. Add the mushrooms or pepper or broccolini. Splash in a 3-4 tbsp of water and cover with a lid. Turn the heat down to medium/low and allow the food to gently steam for 5 minutes. 

  4. Arrange the vegetables onto the plates and top with the patties and a poached egg if using. Spoon over your favourite relish and serve!

Caroline's Kitchen Tips; 

  • If you don’t have time to make the lentil burgers look out for The Key Ingredient Sweet Potato and Lentil Burger. They are so delicious! 

  • If you are going egg free, you will be receiving a good amount of nutrition and protein from the burgers and seeds in particular. The kale is packed with antioxidants.
